PUFA-Free Granola

Revealing one of my “Med•abolic” cookbook recipes today! PUFA-FREE SANTORINI GRANOLA!


Anyone else LOVEEE granola, but realize that every single granola at the store is made with vegetable oil, contains copious amounts of chia and pumpkin seeds, and has other questionable ingredients? Cause same.


During my paleo days, I also went through a phase of eating only grain-free granola, which is a straight PUFA bomb. Didn’t do too well for my digestion either 😅


But like I said, I LOVE GRANOLA. And I want to be able to enjoy it in a way that benefits my health.


When I went to Santorini, I ate copious amounts of granola. I basically subsisted on granola for the 7 days I was there 😂 hence the inspiration for this recipe!


So for my fellow granola lovers, this one is for you! Let’s take a look at some of the key ingredients:


Butter - I used butter to create this Santorini-inspired granola instead of the usual vegetable oil, olive oil, or even coconut oil. Not just to take out the PUFAs, but to give it a more rich and hearty flavor. And WOW. It was a game changer.


Collagen - because I always like to sneak in a little extra protein and glycine where I can 😉 it doesn’t impact the taste or texture whatsoever.


Egg white - this is what makes the granola crispy and forms those beautiful clusters. It did not disappoint!


One Degree Organics oats - not only are these oats organic, they are also sprouted! This aids in digestibility and breakdown of anti-nutrients in the grain before consumption. (PS - you can get these at Costco for a great price).
