Blackened Mahi Mahi

Quite possibly my FAVORITE MEAL EVER: blackened mahi mahi.

Here’s what you need:

2 mahi mahi filets (I get mine from Costco)

1 pastured egg

3/4 cup cassava flour

1 tsp garlic powder

1 tsp onion powder

2 tbsp old bay seasoning (or more if you like it spicier)

4-5 tbsp butter

Here’s what you do:

Whisk the egg in a medium size bowl, set aside.

Mix the cassava flour, garlic & onion powder, and old bay together in a medium size bowl, set aside.

Chop the fish into approx 1x1” cubes, and place them in the bowl with the egg. Stir until the egg has fully saturated the fish.

Add the fish coated in egg to the seasoning mixture and stir thoroughly until combined.

Heat a large ceramic skillet on medium-high heat and add the butter. Wait for it to get hot and bubbly before adding the fish. Shake the pan regularly so the fish doesn’t stick. Flip the fish over after about 2 minutes of cooking. Cook for another 2 minutes or until fully cooked, and enjoy.

I like to eat mine with a side of plantain chips and of course the #raypeat carrot salad. Enjoy! 🤤
