Banana Bread Breakfast Cookies

BANANA BREAD BREAKFAST COOKIES 🤤🍌


I’ve talked about these so many times that they for sure deserve a permanent spot on my feed.


These are literally banana bread in cookie form, and are my favorite edition to my breakfast (which usually includes eggs, cheese, fruit, and bone broth).


•3/4 cup coconut or cassava flour (either works)

•2 tbsp arrowroot starch

•1/4 - 1/2 tsp salt

•1/2 tsp baking soda

•1/4 cup coconut oil, melted

•3 mashed bananas

•2 eggs or 2 gelatin eggs

•1/4 tsp cinnamon

•sprinkle of nutmeg

•2 tbsp honey or maple syrup


Put all of the ingredients into a bowl of a standard mixer. Mix until thoroughly combined. Add the egg last and don't over-mix. Bake at 350 for 11-13 minutes.
